- 1/2 cup [125 mL] balsamic vinegar
- 1/2 cup [125 mL] olive oil
- 1 garlic clove, minced
- 1/2 teaspoon [2.5 mL] salt
- 1/2 teaspoon [2.5 mL] freshly ground pepper
- 4 cups [1 L] finely chopped seeded tomatoes
- 1/3 cup [80 mL] freshly chopped basil
Garlic Bread Slices
- 2 tablespoons [30 mL] olive oil
- 1 garlic clove, minced
- 1/2 teaspoon [2.5 mL] salt
- 1/2 teaspoon [2.5 mL] freshly ground pepper
- 1 tablespoon [15 mL] freshly chopped rosemary
- 16 slices of bread

- Preheat barbecue to medium intensity.
- To prepare garlic bread, into a small bowl, mix together olive oil, minced garlic, salt, freshly ground pepper and freshly chopped rosemary.
- Using a pastry brush, brush both sides of bread slices with mixture.
- Toast garlic bread slices onto warm barbecue rack for 1 minute on each side; arrange side-by-side onto a serving plate.
- Meanwhile, whip together balsamic vinegar, olive oil, minced garlic, salt and freshly ground pepper.
- Delicately mix in chopped tomatoes until well coated with mixture; evenly spoon mixture over toasted garlic bread slices.
- Sprinkle toasts with freshly chopped basil, and serve.
