Grilled Asparagus Tips Raw Ham Rolls
Comments: *'Serrano' ham [meaning mountain ham] is a salted, dried then aged Spanish raw ham, usually served really thinly sliced.
If 'Serrano' ham is impossible to find, use Itallian 'prosciutto' or Portuguese 'presunto'.

  • 6 slices 'serrano'* ham
  • 12 fresh asparagus tips
  • 1 tablespoon [15 mL] olive oil
  • Sea salt, to taste
  • Grossly ground black peppercorns, to taste
  • Preheat barbecue to medium intensity.
  • Half ham slices lengthwise
  • Roll 1 asparagus tip into each ham slice half.
  • Lightly brush roll with olive oil.
  • Sprinkle rolls with sea salt and grossly ground black peppercorns.
  • Grill rolls onto hot barbecue rack turning often for approximately 4 minutes, until asparagus are tender yet still firm.
  • Serve immediately.
