Cod Steaks with a Zest [or broiler]

Cod is of the leanest, mildest, most highly regarded fish consumed in the United States. In fact, one third of all fillets and half of all fish sticks eaten by Americans are cod. One of the first natural resources protected by law, cod remains one of the country's most important commercial fish.
Cod is marketed fresh and frozen, whole-dressed and as fillet and steaks. Once at home, rinse the fish under cold runing water, pat dry and re-wrap. Store it into the coldest part of the refrigerator and use it within 1 to 2 days.
Cod is a delicious fish, with a mild flavor and a very white, firm, flaky flesh. It may be prepared by any cooking method, and is especially suited to baking, broiling and poaching.

  • 4 cod steaks
  • 1 teaspoon [5 mL] cumin
  • Salt and pepper, to taste
  • 2 tablespoons [30 mL] spicy brown mustard
  • 1 tablespoon [15 g] butter
  • 1 lemon, into wedges
  • Dust cod steaks with cumin, salt and pepper.
  • Spread fish steaks with spicy brown mustard.
  • If barbecueing, use butter to baste fish steaks while grilling.
  • Grill fish steaks for about 3 minutes per side.

    Dot fish steaks with butter and broil fish steaks under broiler for about 3 to 4 minutes per side.
  • Serve fish steaks along with lemon wedges.
