Oriental-Style Tuna Fish Burgers

  • 2 teaspoons [10 mL] olive oil
  • 1 clove garlic, finely minced
  • 1 tablespoon [15 mL] freshly finely minced ginger
  • 3 green onions, minced
  • 1 pound [454 g] fresh tuna fish
  • 2 egg whites or 1 egg
  • 1/2 cup [125 mL] freshly made breadcrumbs
  • 1/2 teaspoon [2.5 mL] salt
  • 1/4 teaspoon [1 mL] pepper
  • 2 tablespoons [30 mL] hoisin sauce
  • 1 tablespoon [15 mL] soy sauce
  • 1 teaspoon [5 mL] sesame oil
  • 6 sesame seed buns
  • Into a frypan, preheat olive oil.
  • Mix in minced garlic, ginger and green onions; cook until fragrant, then leave to cool.
  • Wipe dry tuna fish; cut fish into bite-size pieces or just chop fish into a food processor.
  • Well mix in egg whites or egg and breadcrumbs.
  • Mix in cooled garlic mixture; salt and pepper.
  • Shape mixture into approximately 1/2-inch [1.3-cm] thick patties; set aside.
  • To prepare sauce, mix together hoisin sauce, soy sauce and sesame oil into a small bowl.
  • Just before serving, preheat barbecue.
  • Barbecue tuna fish patties on one side for 1 to 2 minutes; brush patties with prepared sauce.
  • Turn patties over; brush patties with prepared sauce.
  • Barbecue patties for 3 to 4 minutes longer.
  • Serve patties, into sesame seed buns.
