Barbecued Trouts

  • 4 [10 to 12-ounce / 284 to 340-g each] dressed rainbow or brook trouts
  • Lemon[s], squeezed
  • 1 tablespoon [15 mL] lemon juice
  • 1/2 cup [125 mL] Sherry
  • 1/2 cup [125 mL] soy sauce
  • 1/4 cup [60 mL] vegetable oil
  • 1 clove garlic, minced
  • Brush trouts thoroughly with lemon juice; transfer trouts into a shallow dish.
  • Combine 1 tablespoon [15 mL] lemon juice, Sherry, soy sauce, vegetable oil and minced garlic for marinade; pour all over trouts.
  • Let stand for 1 hour, turning once.
  • Remove trouts from marinade and arrange into greased hinged wire basket.
  • Preheat gas grill.
  • Cook trouts on medium setting for 12 to 15 minutes, turning once and brushing frequently with marinade.
