White Fish and Bacon Skewers

Really, really easy, yet delicious

  • 1 pound [454 g] white fish fillets, into pieces
  • 1/4 cup [60 mL] fresh lemon juice
  • 1 teaspoon [5 mL] paprika
  • 8 slices bacon
  • Metal skewers, double shafts if possible
  • Preheat barbecue to high heat.
  • Into a shallow glass dish, mix together lemon juice and paprika.
  • Add white fish pieces; stir until well coated.
  • Half bacon slices; roll one piece of bacon all around each piece of fish.
  • Securely thread onto skewers.
  • Lower barbecue temperature to medium-low.
  • Arrange skewers onto hot barbecue rack.
  • Barbecue turning skewers whenever necessary until fish is well-done, for approximately 8 minutes.
