Chef's Ground Beef, Lemon-Butter Sauce [barbecue]
Comments: For unqualified success, make certain that those on the receiving end of this loaf like rare meat, and that the sauce is ready before the meat is put on the flames.
Servings: 3 to 4
  • 1 1/2 pounds [680 g] lean ground beef
  • 1 teaspoon [5 mL] salt
  • 1/4 teaspoon [1 mL] pepper
  • 2 tablespoons [30 mL] butter or margarine
Lemon-Butter Sauce
  • 1 tablespoon [15 mL] butter or margarine
  • 1 tablespoon [15 mL] chopped parsley
  • 1 tablespoon [15 mL] lemon juice
  • 1/8 teaspoon [0.5 mL] salt
  • Pepper
  • Paprika
  • Blend together ground beef, salt and pepper.
  • Form into a loaf about 3 inches wide x 1 1/2 inches thick [7.5 cm wide x 4 cm thick]
  • Spread butter over the loaf.
  • Grill meat over hot charcoals, close to the charcoals.
  • Extinguish serious flareups immediately.
  • Count 5 to 6 minutes for each side, carefully turning meat, only once, with a broad spatula.
  • Meanwhile, prepare lemon-butter sauce.
  • The result should be a loaf crusty on the outside and deliciously rare inside.
  • The minute it comes from the fire, place the loaf on a sizzling hot platter and pour lemon-butter sauce all over.
  • Slice into individual servings and serve on warm plates without any further delay.
Lemon-Butter Sauce
  • Melt butter or margarine; add parsley, lemon juice, salt and a sprinkling of pepper and paprika.
