- 1 1/2 pounds [680 g] ground beef [shoulder preferably]
- 2 teaspoons [10 mL] salt
- 1/2 teaspoon [2.5 mL] freshly ground pepper
- 4 hamburger buns
- Oil, for the barbecue rack

- Using a fork, delicately mix together ground beef, salt and freshly ground pepper.
- It is important not to over-manipulate the meat.
- Delicately shape seasoned ground beef into 4 even-sided, approximately 3/4-inch [2-cm] thick meat patties, of the size of the buns.
- For fat to drip freely, arrange barbecue rack at an angle.
- Preheat barbecue until hot, then generously oil barbecue rack to prevent meat patties from sticking to it.
- Arrange beef patties onto barbecue rack, then lower temperature to medium.
- Grill meat patties for approximately 6 minutes on each side, making sure not to press on the meat.
- Serve meat patties into hamburger buns, already grilled to taste or plain.
