Bacon and Pineapple Slices [barbecue]
Comments: Excellent served at breakfast along with scrambled eggs, and any favorite muffins.
While frying, it is important to watch and turn bacon slices often, making sure that charcoals stay just warm at all times. You want to slowly brown the bacon until golden to get evenly crisp bacon slices, without getting flames from melting fat which would burn the bacon.
If desired, you can also use well-drained canned pineapple slices.

  • 8 [1/2-inch / 1.3-cm] thick slices bacon
  • 4 approximately [1/2-inch / 1.3-cm] thick slices freshly peeled cored pineapple
  • Melted butter or margarine
  • Preheat barbecue until warm.
  • Lay bacon slices, approximately 4 inches [10 cm] from warm charcoals, onto barbecue rack.
  • Turning often, fry bacon slices for approximately 10 to 12 minutes, until crisp and golden brown.
  • Then arrange pineapple slices onto barbecue rack; brush slices with melted butter or margarine.
  • Turning slices once using a spatula, barbecue pineapple slices for approximately 5 to 6 minutes on each side, until really hot and lightly browned.
  • Serve crips bacon slices, along with golden pineapple slices.
