- 1 1/2 pounds [680 g] ground lean beef
- 1 teaspoon [5 mL] salt
- 1/4 teaspoon [1 mL] pepper
- 2 tablespoons [30 g] butter or margarine
Lemon Butter Sauce
- 1 tablespon [15 g] butter or margarine
- 1 tablespon [15 mL] freshly chopped parsley
- 1 tablespon [15 mL] lemon juice
- 1/8 teaspoon [0.5 mL] salt
- Pepper, to taste
- Paprika, to taste

- Lower barbecue rack to its lower position, then preheat barbecue until charcoals become gray, almost white.
- Season ground beef with salt and pepper; mix until well blended.
- Shape seasoned ground beef into an approximately 7.5 cm wide x 4-cm thick [3-inch wide x 1 1/2-inch thick] meat loaf.
- Evenly spread butter or margarine all over meat loaf.
- Delicately transfer meat loaf onto lower rack of barbecue, close to hot charcoals.
- Extinguish serious flare-ups immediately.
- Barbecue meat loaf for 5 to 6 minutes on each side turning once, carefully turning meat loaf using a broad spatula.
- Meanwhile, to prepare lemon butter sauce, melt butter or margarine into a small saucepan.
- Mix in freshly chopped parsley, lemon juice and salt.
- Season sauce to taste with pepper and paprika.
- Immediately transfer crusty on the outside and deliciously rare on the inside meat loaf onto a hot sizzling plate.
- Pour hot lemon butter sauce all over meat loaf.
- Slice then serve meat loaf immediately, onto warm individual plates.
