Pork Back Ribs with Salsa [barbecue]

  • 2 pounds [900 g] pork back ribs
  • 1/4 cup [60 mL] seeded minced Jalapeno pepper
  • 1/2 cup [125 mL] soy sauce
  • 2 cups [500 mL] salsa [mild, medium or hot]
  • 4 cloves garlic, minced
  • 1/2 cup [125 mL] liquid honey
  • Into a large casserole, completely cover ribs with water.
  • Bring to a boil, lower heat and leave to simmer slowly for 45 to 60 minutes.
  • Drain and transfer ribs into a large bowl.
  • Into a small bowl, well mix together minced Jalapeno pepper, soy sauce, salsa, minced garlic and honey.
  • Pour mixture all over back ribs.
  • Leave to marinate at room temperature for 1 hour, or up to 48 hours refrigerated.
  • Preheat barbecue to medium-low intensity.
  • Lay ribs onto the non-stick rack of a barbecue roasting pan for ribs.
  • Grill onto preheated barbecue rack for 10 to 15 mniutes, turning and coating ribs with marinade.
