- 4 to 5 pounds [1.8 to 2.27 kg] beef or pork ribs
- 1 tablespoon [15 mL] any mixed meat, vegetable... or popcorn enhancing spices
- 1 cup [250 mL] mild smoked barbecue sauce
- 1/4 cup [60 mL] honey
- 1/4 cup [60 mL] lemon juice
- 1 tablespoon [15 mL] Worcestershire sauce
- 1 tablespoon [15 mL] soya sauce
- 1 tablespoon [15 mL] mustard
- 1/2 to 1 teaspoon [2.5 to 5 mL] garlic powder

- Leave some charcoals to soak for 1 hour; drain and preheat charcoals.
- Season beef or pork ribs with mixed spices.
- Arrange preheated charcoals, drained hickory pieces and a roasting pan with a wire rack filled with water into the smoker.
- Arrange beef or pork ribs onto wire rack.
- Smoke ribs for 3 hours.
- Then, into a bowl, mix together mild smoked barbecue sauce, honey, lemon juice, Worcestershire sauce, soya sauce, mustard and garlic powder.
- Using a brush, coat smoked ribs with mixture.
- Close cover and smoke ribs for approximately 1 hour more, until tender.
