BLT Grilled Chicken and Pasta Salad

Serve this salad while pasta and chicken are warm or chill and serve it cold; its great both ways!

  • 12 ounces [340 g] chicken whites
  • 1/3 cup [80 mL] mayonnaise
  • 1/4 cup [60 mL] water
  • 1 tablespoon [15 mL] barbecue sauce
  • 1 1/2 teaspoons [7.5 mL] white vinegar
  • 1/4 teaspoon [1 mL] ground pepper
  • 4 slices turkey bacon
  • 8 ounces / 227 g [3 cups / 750 mL] multi-colored pasta twists
  • 3 cups [750 mL] romaine lettuce
  • 1 large tomato
  • Preheat barbecue.
  • Arrange chicken whites onto hot barbecue rack.
  • Meanwhile, mix together mayonnaise, water, barbecue sauce, white vinegar and ground pepper into a large bowl until well blended.
  • Fry bacon until very crisp; break-up into small bits.
  • Boil pasta noodles following package directions; drain.
  • Break-up lettuce into small pieces; dice the tomato.
  • Add drained pasta noodles to mayonnaise mixture stirring until well coated.
  • Cut chicken whites into bite-size pieces and add to noodles, along with crisp bacon bits, lettuce pices and tomato dices.
  • Mix well, and serve.
