Apollo-Style Chicken Patties

Patties
  • 1 pound [454 g] ground chicken
  • 1 egg
  • 1/2 cup [125 mL] breadcrumbs
  • 1 teaspoon [5 mL] salt
  • 1/2 teaspoon [2.5 mL] pepper
  • 1/2 teaspoon [2.5 mL] oregano
  • 1/2 teaspoon [2.5 mL] paprika
  • 1/4 teaspoon [1 mL] grated lemon rind
  • 1 garlic clove, minced
Sauce
  • 1 cup [250 mL] plain yogurt
  • 2 tablespoons [30 mL] mayonnaise
  • 2 tablespoons [30 mL] freshly chopped parsley
  • 1/2 teaspoon [2.5 mL] salt
  • 2 garlic cloves, minced
To serve
  • 4 pita breads
  • 2 cups [500 mL] lettuce strips
Patties
  • Mix together ground chicken, egg, breadcrumbs, salt, pepper, oregano, paprika, lemon rind and garlic clove.
  • Shape into 4 patties [approximately 4 inches / 10 cm in diameter and 3/4-inch / 2-cm thick].
  • Barbecue until no longer pink inside.
Sauce
  • Mix together yogurt, mayonnaise, parlsey, salt and garlic.
To Serve
  • Open-up pita breads into pockets.
  • Fill each pocket with 1 chicken pattie; coat pattie with sauce and garnish with lettuce strips.
