- 4 chicken whites
- 8 slices Cheddar cheese
Marinade
- 2/3 cup [160 mL] vegetable oil
- 1/3 cup [80 mL] lime juice
- 2 tablespoons [30 mL] finely chopped hot green pepper
- 2 cloves garlic, minced

- Into a square 9-inch [23-cm] glass dish, mix together all marinade ingredients.
- Lay chicken whites into marinade; leave to marinate, refrigerated for at least 45 minutes, turning chicken whites once.
- Preheat barbecue until charcoals become gray, almost white.
- Then remove chicken whites from marinade; well drain chicken whites.
- Barbecue chicken whites onto hot barbecue rack for 7 minutes.
- Turn chicken whites over and barbecue for 6 to 8 minutes, more, until tender to the fork, no longer pink inside.
- Lay 2 slices Cheddar cheese over each chicken white and barbecue until cheese just starts to melt.
- Serve immediately.
