Ranch-Style Chicken Pieces
Comments: If possible, prepare the basting at least 24 hours before using, for flavors to blend.

  • 3 chicken fryers, into pieces [half breasts, wings, thighs and legs]
  • Melted butter
Basting
  • 1/2 cup [125 mL] white apple vinegar
  • 1/3 cup [80 mL] salad oil
  • 1 1/2 teaspoon [7.5 mL] Worcestershire sauce
  • 1/2 teaspoon [2.5 mL] minced onion
  • 1 clove garlic, minced
  • 3 teaspoons [15 mL] salt
  • 1 teaspoon [5 mL] paprika
  • 1 1/2 teaspoon [7.5 mL] tomato paste
  • 6 to 8 drops Tabasco sauce
  • 1/4 teaspoon [1 mL] dry mustard
  • Preheat barbecue until charcoals become gray, almost white.
  • Well mix together all basting ingredients.
  • Baste chicken pieces with melted butter, and sear chicken pieces onto hot barbecue rack over hot charcoals for approximately 5 minutes.
  • Turn then brush chicken pieces with some of the basting.
  • Cook chicken pieces until well-done, for approximately 35 minutes, turning and basting chicken pieces every 3 to 5 minutes with remaining basting.
