- 3 chicken fryers, into pieces [half breasts, wings, thighs and legs]
- Melted butter
Basting
- 1/2 cup [125 mL] white apple vinegar
- 1/3 cup [80 mL] salad oil
- 1 1/2 teaspoon [7.5 mL] Worcestershire sauce
- 1/2 teaspoon [2.5 mL] minced onion
- 1 clove garlic, minced
- 3 teaspoons [15 mL] salt
- 1 teaspoon [5 mL] paprika
- 1 1/2 teaspoon [7.5 mL] tomato paste
- 6 to 8 drops Tabasco sauce
- 1/4 teaspoon [1 mL] dry mustard

- Preheat barbecue until charcoals become gray, almost white.
- Well mix together all basting ingredients.
- Baste chicken pieces with melted butter, and sear chicken pieces onto hot barbecue rack over hot charcoals for approximately 5 minutes.
- Turn then brush chicken pieces with some of the basting.
- Cook chicken pieces until well-done, for approximately 35 minutes, turning and basting chicken pieces every 3 to 5 minutes with remaining basting.
