Indian-Style Grilled Chicken Skewers

Comments: Easy delicious skewers that are excellent served along with a pecan green salad, honey-mustard salad dressing and a fine herbs lemony couscous.
Skewers preparation time : 15 minutes + marinating
Cooking time : approximately 12 minutes
Chicken cubes can be marinated and threaded onto wooden skewers one day prior to grilling; arrange brochettes onto a glass plate, cover plate with plastic wrap, then refrigerate brochettes until ready to barbecue.
These can also be broiled on all sides, 4 inches [10 cm] away from heat.

  • 1/2 cup [125 mL] plain fat-free yogurt
  • 1 clove garlic, finely minced
  • 1 tablespoon [15 mL] freshly grated ginger
  • 2 teaspoons [10 mL] curry powder
  • 1 teaspoon [5 g] sugar
  • 1/2 teaspoon [2.5 mL] salt
  • 1/8 teaspoon [0.5 mL] Cayenne pepper
  • 4 [4-ounce / 113-g each] boned and skinned chicken breast halves, into 1 1/2-inch [4-cm] cubes
  • 2 tablespoons [30 mL] freshly squeezed lime juice, divided
  • 4 lime segments
  • Into a shallow glass dish, well mix together yogurt, minced garlic, grated ginger, curry powder, sugar, salt and Cayenne pepper.
  • Add chicken cubes; toss until well coated.
  • Cover dish with plastic wrap; refrigerate for 15 minutes.
  • Preheat oven broiler to medium heat or a gaz barbecue to medium intensity.
  • Thread marinated chicken cubes onto 4 or 5 wooden skewers, already soaked into cold water for approximately 30 minutes.
  • Throw away remaining marinade.
  • Arrange skewers onto a rack into a baking pan or directely over barbecue rack.
  • Brush skewers with half of lime juice.
  • Barbecue skewers on all sides, 4 inches [10 cm] away from heat, brushing skewers with remaining lime juice as desired, until chicken is done, no longer pink inside, for approximately 6 minutes on each side.
  • Transfer skewers onto individual plates.
  • Garnish with lime segments and serve.
