Chicken Satay Skewers, Peanut Butter Marinade and Sauce

  • 6 chicken whites, into 1/2-inch [1.3-cm] thick strips
  • 1 freshly chopped coriander sprig, to garnish
  • Oil
Peanut Butter Marinade
  • 1 tablespoon [15 mL] brown sugar
  • 1 tablespoon [15 mL] curry powder
  • 2 tablespoons [30 mL] peanut butter
  • 1/2 cup [125 mL] soya sauce
  • 1/2 cup [125 mL] freshly squeezed lime juice
  • 2 garlic cloves, minced
  • 1 pinch crushed chiles
Peanut Butter Sauce
  • 2/3 cup [160 mL] peanut butter
  • 1 1/2 cups [375 mL] coconut milk
  • 1/4 cup [60 mL] freshly squeezed lemon juice
  • 2 tablespoons [30 mL] soya sauce
  • 2 tablespoons [30 mL] brown sugar
  • 1 teaspoon [5 mL] freshly grated ginger
  • 4 garlic cloves, minced
  • 1 pinch Cayenne pepper
  • 1/4 cup [60 mL] chicken broth
  • 1/4 cup [60 mL] heavy cream
  • 9 wooden skewers
  • Into a shallow dish or a heavy plastic bag with a zipper, mix together all peanut butter marinade ingredients [brown sugar, curry powder, peanut butter, soya sauce, fresh lime juice, minced garlic and crushed chiles].
  • Add chicken strips; leave to marinate for at least 2 hours, or overnight.
  • Meanwhile, leave wooden skewers to soak into water to prevent them from burning while barbecueing.
  • Prepare peanut butter sauce and preheat barbecue to high intensity.
  • Then thread chicken strips onto skewers.
  • Lightly oil barbecue rack to prevent chicken from sticking.
  • Arrange chicken skewers onto hot barbecue rack and lower barbecue temperature to medium.
  • Barbecue turning and coating skewers often with marinade for 6 to 8 minutes, until no longer pink inside.
  • Serve skewers sprinkled with freshly chopped coriander sprig, along with peanut butter sauce.
Peanut Butter Sauce
  • Into a casserole, mix together peanut butter, coconut milk, freshly squeezed lemon juice, soya sauce, brown sugar, freshly grated ginger, minced garlic and Cayenne pepper.
  • Heat mixture over medium heat, onto barbecue burner if possible or on the stove until as thick as heavy cream, for approximately 15 minutes.
  • Cream mixture for a few seconds, into a blender or a food processor; pour into a bowl.
  • Mix in chicken broth and heavy cream, stirring unto smooth.
  • Set aside.
  • Serve at room temperature.
