Marinated Chicken Halves

  • 2 [2 1/2-pound / 1.13-kg each] chickens
  • Salt and pepper, to taste
Marinade
  • 2 garlic cloves, crushed and minced
  • 3 tablespoons [45 mL] olive oil
  • 1 tablespoon [15 mL] soy sauce
  • 1 tablespoon [15 mL] tomato paste
  • 1/4 cup [60 mL] hot chicken broth
  • Few drops Worcestershire sauce
  • Juice of 1 lime
  • Paprika, to taste
  • Salt and pepper, to taste
  • Preheat barbecue to medium intensity.
  • Into a bowl, thoroughly mix together all marinade ingredients.
  • Half chickens; brush chicken halves with marinade.
  • Salt and pepper.
  • Arrange chicken halves over hot charcoals, onto barbecue rack; barbecue for 8 minutes.
  • Turn chicken halves; brush with marinade.
  • Barbecue for 8 minutes more.
  • Brush chicken halves with more marinade, and babecue for 25 to 35 minutes more.
