- 4 or 8 [1-inch / 2,5-cm thick] male turkey slices
or 2 male turkey breast halves, cut into medallions
Spicy Maple Syrup Marinade
- 1/2 onion, finely minced
- 1 clove garlic, minced
- 3/4 cup [190 mL] pure maple syrup
- 6 tablespoons [90 mL] maple vinegar
- 2 tablespoons [30 mL] coriander seeds
- 2 star anise fruits
- 1 bay leaf
- 1 teaspoon [5 mL] hot pepper paste or Tabasco sauce
- 2 teaspoons [10 mL] finely minced fresh ginger
- 2 teaspoons [10 mL] coarse salt

- Into a casserole, mix together all spicy maple syrup marinade ingredients.
- Bring to a boil and leave marinade to evaporate to 1/3rd.
- Remove from heat, pour into a bowl and leave marinade to cool to room temperature.
- Mix in turkey slices or medallions; leave to marinate for at least 5 minutes.
- Grill turkey slices or medallions onto hot barbecue rack for approximately 8 minutes basting with marinade and turning pieces after 4 minutes, until a meat thermometer inserted into the thickest part indicates 170°F [77°C].
