- 4 chicken whites
- Fresh mint sprigs, to decorate
- Orange slices, to decorate
- Lemon or lime slices, to decorate
Marinade
- 1/2 orange, finely grated rind and juice
- 1/2 lemon or lime, finely grated rind and juice
- 2 tablespoons [30 mL] olive oil
- 2 tablespoons [30 mL] clear honey
- 2 tablespoons [30 mL] freshly chopped mint
- 1/4 teaspoon [1 mL] ground cumin
- Salt and freshly ground black pepper, to taste

- Using a large knife, cut chicken whites into 1-inch [2.5-cm] each cubes.
- Into a large glass bowl, mix together all marinade ingredients until well blended.
- Add chicken cubes stirring until well coated; cover bowl with plastic wrap.
- Leave chicken cubes to marinate refrigerated for at least 2 hours, or overnight.
- When ready, preheat barbecue to medium intenisty.
- Evenly thread chicken cubes onto metal skewers
- Barbecue onto hot barbecue rack for approximately 10 minutes, coating chicken cubes with marinade and turning often.
- Serve chicken cubes, garnished with fresh mint sprigs, orange slices and lemon or lime slices.
