Florida-Style Chicken Coating
Comments: This coating, which can be frozen, used to brush chicken while barbecueing, can also be used when griling chicken under preheated oven broiler.
Careful ! When using, only pour a little coating at a time into a small bowl, as, in order not to contaminate the coating, it really is important not to dip already used brush into remaining coating if you want to keep any excess coating for another use.

  • 1 cup [225 g] butter
  • 1/2 cup [125 mL] cider vinegar
  • 1/2 cup [125 mL] catsup
  • 2 [9-ounce / 255-mL each] bottles prepared horseradish
  • 1 cup [250 mL] freshly squeezed lemon juice [3 lemons]
  • 1/2 teaspoon [2.5 mL] salt
  • 1 1/2 teaspoons [7.5 mL] Worcestershire sauce
  • 1 teaspoon [5 mL] Tabasco sauce [optional]
  • Over low heat, slowly melt butter into a stainless steel casserole.
  • Then mix in cider vinegar, catsup, horseradish, lemon juice, salt, Worcestershire sauce and Tabasco sauce.
  • Bring mixture to a boil; leave mixture to simmer slowly, uncovered for 20 to 25 minutes, for flavors to blend.
  • Remove from heat; leave mixture to cool completely, before using.
