Provencal-Style Marinade

An every day marinade used to marinate chicken or pork before barbecueing.
Herbes de Provence : a mixture of rosemary, thyme, basil, marjoram and savory sold at specialty grocery stores, and at a few supermarkets. For a change, use any desired herbs instead of herbes de Provence; rosemary just by itself simply is extraordinary.

IngredientsPreparation
  • 1/4 cup [60 mL] Dijon mustard
  • 2 garlic cloves, minced
  • 2 tablespoons [30 mL] balsamic vinegar
  • 2 tablespoons [30 mL] lemon juice
  • 2 tablespoons [30 mL] olive oil
  • 1 tablespoon [15 mL] herbes de Provence
  • Salt and pepper, to taste
  • Mix together all ingredients into a bowl, large enough to hold desired chicken or pork piece[s] while marinating.
