Florida-Style Barbecue Coating for Chicken
Comments: Use to baste chicken while grilling.
This coating can be frozen.

  • 1/2 pound [227 g] butter
  • 1/2 cup [125 mL] cider vinegar
  • 1/2 cup [125 mL] ketchup
  • 2 [9-ounce / 255-mL each] bottles prepared horseradish
  • Juice of 3 lemons
    or
    1 cup [250 mL] lemon juice
  • 1/2 teaspoon [2.5 mL] salt
  • 1/2 tablespoon [7.5 mL] Worcestershire sauce
  • 1 teaspoon [5 mL] hot pepper sauce [optional]
  • Into a stainless steel saucepan, melt butter over low heat.
  • Mix in cider vinegar, ketchup, horseradish, lemon juice, salt, Worcestershire sauce and hot pepper sauce.
  • Simmer, uncovered, for 20 to 25 minutes to blend flavors.
