Barbecue Sauce for Pork

  • 3 cups [750 mL] vinegar
  • 1 cup [250 mL] Worcestershire sauce
  • 1/4 cup [60 mL] dry mustard
  • 1/4 cup [60 mL] ketchup
  • 1/4 cup [60 g] butter or margarine
  • 1 medium-size onion, quartered
  • 1 lemon, quartered
  • 16 cloves
  • 10 bay leaves
  • 5 garlic cloves
  • 1 tablespon [15 mL] salt
  • 1 teaspoon [5 mL] oregano
  • 1 teaspoon [5 mL] rosemary
  • 1/2 teaspoon [2.5 mL] pepper
  • 1/4 teaspoon [1 mL] Cayenne pepper
  • 1/4 teaspoon [1 mL] Tabasco sauce
  • Bring together all ingredients to a boil.
  • Lower heat and simmer, uncovered, for 15 minutes, stirring occasionally.
  • Strain sauce.
