Skewers from the Sea [or broiler]

IngredientsPreparation
  • 1/4 pound [113 g] fresh scallops
  • 1/2 pound [227 g] fresh medium-size shrimps, shelled
  • 1/4 pound [113 g] fresh cod or turbot fish, cut into 6 [1-inch / 2.5-cm] cubes
  • 6 mushroom caps, scrubbed
  • 1 onion, cubed
Marinade
  • 2 tablespoons [30 mL] vegetable oil
  • 4 tablespoons [60 mL] lemon juice
  • 1 onion, minced
  • 10 slices carrot
  • 1 tablespoon [15 mL] chopped parsley
  • 1 teaspoon [5 mL] thyme
  • 1 bay leaf
  • Pinch of pepper
  • 2 garlic cloves, minced
  • Oil
  • Mix together all marinade ingredients [vegetable oil, lemon juice, minced onion, carrot slices, chopped parsley, thyme, bay leaf, pepper and minced garlic.
  • Add scallops, shrimps, cod or turbot cubes, mushroom caps and onion cubes.
  • Marinate for approximately 1 hour, refrigerated, turning pieces from time to time.
  • Alternately thread fish cubes, scallops, shrimps, mushroom caps and onion cubes.
  • Lightly brush with oil.
  • Barbecue or broil, turning skewers and brushing with marinade often, for approximately 10 minutes.
