Anchovy-Stuffed Shrimp Bites
Comments: These bacon wrapped anchovy-stuffed shrimps are excellent served as appetizers. Have at least 2 bites for each guest.
IngredientsPreparation
  • Fresh giant shrimps
  • 1 anchovy fillet per shrimp
  • 1/2 cut lengthwise slice bacon per shrimp
  • 1 toothpick per shrimp
  • Preheat barbecue until hot.
  • Shell shrimps; remove veins.
  • Slit open the back of each shrimp thickwise, being careful not to cut through.
  • Insert 1 anchovy fillet into each shrimp.
  • Roll 1/2 slice bacon all around each stuffed shrimp.
  • Secure bacon with toothpicks.
  • Turning often, barbecue shrimp bites over hot barbecue rack until bacon is crisp.
  • Be careful not to overcook the shrimps as you want is hot and juicy not dry bites.
