- 4 Italian tomatoes, drained and diced [reserve juices for soups]
- 12 fresh basil sprigs, chopped
- Salt and pepper, to taste
- 2 or 3 cloves garlic
- Grated Parmesan cheese [or a mixture of Romano cheese and Parmesan cheese]
- A little olive oil
- French bread stick, sliced

- Mix together tomato dices, basil, salt and pepper, garlic, a little grated cheese and olive oil.
- Cover bowl with a clean towel; leave to rest at room temperature for 2 hours, for flavours to blend perfectly.
- Spread bread slices with tomato mixture.
- Sprinkle with more grated cheese.
- Brown into a preheated 375°F [190°C] oven for 5 minutes or barbecue, on top rack.
