Bruschettas with Fresh Basil

Comments: Pronounced 'bruskettas' as in the Italtian language, 'ch' is pronounced 'k'.
As I watch my calories intake, I do not brush my bread slices with olive oil and garlic as recommanded in the original recipe and it is just as good.
  • 4 Italian tomatoes, drained and diced [reserve juices for soups]
  • 12 fresh basil sprigs, chopped
  • Salt and pepper, to taste
  • 2 or 3 cloves garlic
  • Grated Parmesan cheese [or a mixture of Romano cheese and Parmesan cheese]
  • A little olive oil
  • French bread stick, sliced
  • Mix together tomato dices, basil, salt and pepper, garlic, a little grated cheese and olive oil.
  • Cover bowl with a clean towel; leave to rest at room temperature for 2 hours, for flavours to blend perfectly.
  • Spread bread slices with tomato mixture.
  • Sprinkle with more grated cheese.
  • Brown into a preheated 375°F [190°C] oven for 5 minutes or barbecue, on top rack.
