Bruschettas

Servings: 8 to 10
  • 1/2 cup [125 mL] olive oil
  • 4 large tomatoes, peeled, seeded and sliced
  • 2 tablespoons [30 mL] freshly chopped basil
  • 6 garlic cloves, minced
  • 1 teaspoon [5 mL] oregano
  • Pepper and salt
  • 1/2 cup [115 g] freshly grated Parmesan cheese
  • 20 slices French bread stick
  • Into a frypan, over high heat, heat half of olive oil.
  • Add tomato slices and basil; cook for 4 minutes.
  • Take away from heat.
  • Preheat oven to 350°F [180°C].
  • Into a small saucepan, heat remaining oil; cook minced garlic and oregano for 2 minutes.
  • Evenly spread tomato mixture over bread slices.
  • Garnish with garlic mixture.
  • Lightly sprinkle with pepper and salt.
  • Sprinkle with grated Parmesan cheese.
  • Brown into preheated oven for approximately 5 to 10 minutes, checking.
  • Serve hot.
