- 1/2 cup [125 mL] olive oil
- 4 large tomatoes, peeled, seeded and sliced
- 2 tablespoons [30 mL] freshly chopped basil
- 6 garlic cloves, minced
- 1 teaspoon [5 mL] oregano
- Pepper and salt
- 1/2 cup [115 g] freshly grated Parmesan cheese
- 20 slices French bread stick

- Into a frypan, over high heat, heat half of olive oil.
- Add tomato slices and basil; cook for 4 minutes.
- Take away from heat.
- Preheat oven to 350°F [180°C].
- Into a small saucepan, heat remaining oil; cook minced garlic and oregano for 2 minutes.
- Evenly spread tomato mixture over bread slices.
- Garnish with garlic mixture.
- Lightly sprinkle with pepper and salt.
- Sprinkle with grated Parmesan cheese.
- Brown into preheated oven for approximately 5 to 10 minutes, checking.
- Serve hot.
