Easy Bruschettas
From: Figaro, Beauharnois, Quebec, Canada
  • 3 tomatoes
  • 5 or 6 green onions, white and green parts, finely chopped
  • 1/4 cup [60 mL] olive oil [good quality]
  • 1/8 cup [30 mL] balsamic vinegar
  • 1/8 cup [30 mL] red wine vinegar
  • Salt and pepper
To Serve
  • 1 crusty bread stick
  • Garlic butter
  • Bocconcini cheese slices
  • Finely dice tomatoes.
  • Mix together tomato dices, green onions, olive oil, balsamic and red wine vinegars; salt and pepper to taste.
To Serve
  • Preheat oven broiler.
  • Slice bread stick; spread slices with garlic butter and broil.
  • Leave slices at room temperature for a few minutes.
  • Spread each slice with tomato mixture; garnish with a slice bocconcini cheese.
