- 3 tomatoes
- 5 or 6 green onions, white and green parts, finely chopped
- 1/4 cup [60 mL] olive oil [good quality]
- 1/8 cup [30 mL] balsamic vinegar
- 1/8 cup [30 mL] red wine vinegar
- Salt and pepper
To Serve
- 1 crusty bread stick
- Garlic butter
- Bocconcini cheese slices

- Finely dice tomatoes.
- Mix together tomato dices, green onions, olive oil, balsamic and red wine vinegars; salt and pepper to taste.
To Serve
- Preheat oven broiler.
- Slice bread stick; spread slices with garlic butter and broil.
- Leave slices at room temperature for a few minutes.
- Spread each slice with tomato mixture; garnish with a slice bocconcini cheese.
