Avocado-Shrimp Crackers

  • Large shrimps [to garnish]
  • 1/2 cup [125 mL] mayonnaise
  • 1/4 cup [60 mL] oil
  • 1 tablespoon [15 mL] lemon juice
  • 1 avocado
  • Crackers
  • Boil and cool shrimps.
  • Mix together mayonnaise, oil and lemon juice; reserve refrigerated.
  • Just before serving, peel and slice avocado.
  • Top each cracker with 1 slice avocado.
  • Top with a little mayonnaise mixture.
  • Top with a shrimp.
