Baked Swiss Cheese Bites

  • 8 slices rye bread
  • 1/2 cup [125 mL] mayonnaise
  • 1/4 cup [60 mL] minced onion
  • 2 tablespoons [30 mL] chopped parsley
  • 8 slices Swiss cheese
  • Toast rye bread slices in a toaster.
  • Remove crusts; cut each slice into 4 squares.
  • Mix together mayonnaise, minced onion and chopped parsley.
  • Spread mixture over bread squares.
  • Cut each slice of cheese into 4 squares.
  • Top each square of bread with a square of cheese.
  • Broil under preheated oven for 2 to 4 minutes, until melted.
