Baked Cheddar Cheese Potato Slices

  • 2 medium-size baking potatoes
  • Melted butter
  • Salt and pepper
  • 1 1/4 cups [285 g] finely grated Canadian Cheddar cheese
  • 6 bacon slices, cooked and crumbled
  • 3 tablespoons [45 mL] finely minced green onion
  • Preheat oven to 375°F [190°C].
  • Peel potatoes.
  • Cut one thin slice at both ends of each potato.
  • Cut potatoes into 1/4-inch [6-mm] thick slices.
  • Dry potato slices with paper toweling; arrange slices side-by-side onto a lightly greased baking sheet.
  • Brush potato slices with melted butter; sprinkle with salt and pepper
  • Bake in preheated oven for 10 minutes, until tender.
  • In a bowl, mix together grated cheese, bacon crumbs and minced green onion; evenly sprinkle over potato slices.
  • Bake in preheated oven for 5 minutes, to melt cheese.
