- 2 medium-size baking potatoes
- Melted butter
- Salt and pepper
- 1 1/4 cups [285 g] finely grated Canadian Cheddar cheese
- 6 bacon slices, cooked and crumbled
- 3 tablespoons [45 mL] finely minced green onion

- Preheat oven to 375°F [190°C].
- Peel potatoes.
- Cut one thin slice at both ends of each potato.
- Cut potatoes into 1/4-inch [6-mm] thick slices.
- Dry potato slices with paper toweling; arrange slices side-by-side onto a lightly greased baking sheet.
- Brush potato slices with melted butter; sprinkle with salt and pepper
- Bake in preheated oven for 10 minutes, until tender.
- In a bowl, mix together grated cheese, bacon crumbs and minced green onion; evenly sprinkle over potato slices.
- Bake in preheated oven for 5 minutes, to melt cheese.
