Baked Swiss Cheese and Ham Potato Slices

  • 2 medium-size baking potatoes
  • 1 1/4 cups [285 g] Canadian Swiss cheese
  • 1/2 cup [125 mL] finely chopped cooked ham
  • 3 tablespoons [45 mL] finely chopped green onion
  • Melted butter
  • Salt and pepper
  • Preheat oven to 375°F [190°C].
  • Peel potatoes.
  • Cut one thin slice at both ends of each potato.
  • Cut potatoes into 1/4-inch [6-mm] thick slices.
  • Dry potato slices using paper toweling; arrange slices side-by-side onto a lightly greased baking sheet.
  • Brush potato slices with melted butter; sprinkle with salt and pepper
  • Bake into preheated oven for 10 minutes, until tender.
  • Into a bowl, mix together Swiss cheese, chopped ham and chopped green onion; evenly sprinkle over potato slices.
  • Bake into preheated oven for 5 minutes more, to melt the cheese.
