Five-Cheese Quiche Squares

  • 5 eggs, slightly beaten
  • 1/3 cup [75 g] grated Parmesan cheese
  • 1 1/2 cups [340 g] grated 4-cheese Italian cheese, divided
  • 1 [10-ounce / 284-g] pack fresh spinach leaves, boiled, well drained then chopped
  • 1/2 teaspoon [2.5 mL] basil
  • 1/2 teaspoon [2.5 mL] salt
  • 1/2 teaspoon [2.5 mL] pepper
  • 2 small tomatoes, thinly sliced
  • Preheat oven to 350°F [180°C].
  • Beat together beaten eggs, grated Parmesan cheese, 1 1/4 cups [285 g] grated 4-cheese Italian cheese, chopped spinach, basil, salt and pepper.
  • Pour mixture into a lightly greased 9-inch [23-cm] square baking dish.
  • Top with tomato slices.
  • Bake into preheated oven, for 15 to 20 minutes.
  • Sprinkle all over with remaining grated 4-cheese Italian cheese.
  • Cover dish; let stand for 15 minutes.
  • Serve, cut into 1 1/2-inch [4-cm] squares.
