- 8 3/4 ounces [250 g] goat cheese, softened
- 3/4 cup [190 mL] minced rinsed spinach leaves
- Pinch basil or oregano [optional]
- Salt and pepper
- 5 tablespoons [75 g] melted butter
- 6 sheets fillo pastry

- Mix together softened goat cheese, minced spinach leaves and, if desired, basil or oregano; salt and pepper to taste.
- Reserve.
- Brush one sheet fillo pastry with melted butter.
- Top with a sheet fillo pastry.
- Cut into 8 rectangles.
- Spread each rectangle with 1 teaspoon [5 mL] cheese/spinach mixture and, if desired, roll rectangles, twisting ends.
- Repeat with remaining ingredients.
- Just before serving, preheat oven to 375°F [190°C].
- Bake for approximately 10 minutes, until just golden.
