Feta Cheese Spinach Pastries

  • 8 3/4 ounces [250 g] goat cheese, softened
  • 3/4 cup [190 mL] minced rinsed spinach leaves
  • Pinch basil or oregano [optional]
  • Salt and pepper
  • 5 tablespoons [75 g] melted butter
  • 6 sheets fillo pastry
  • Mix together softened goat cheese, minced spinach leaves and, if desired, basil or oregano; salt and pepper to taste.
  • Reserve.
  • Brush one sheet fillo pastry with melted butter.
  • Top with a sheet fillo pastry.
  • Cut into 8 rectangles.
  • Spread each rectangle with 1 teaspoon [5 mL] cheese/spinach mixture and, if desired, roll rectangles, twisting ends.
  • Repeat with remaining ingredients.
  • Just before serving, preheat oven to 375°F [190°C].
  • Bake for approximately 10 minutes, until just golden.
