- 3 ounces [85 g] mild Cheddar cheese, well chilled
- 3 ounces [85 g] Swiss cheese, well chilled
- 3 ounces [85 g] Parmesan cheese cut into 1-inch [2.5-cm] pieces, at room temperature
- 1 loaf party rye bread, sliced
- 1/4 cup [60 mL] mayonnaise
- 4 green onions, cut into 1-inch [2.5-cm] pieces

- Shred Cheddar cheese onto waxed paper.
- Shred Swiss cheese onto waxed paper.
- Using a steel blade, grate Parmesan cheese onto waxed paper.
- Spread each slice of bread with mayonnaise; top with a few green onion pieces.
- Sprinkle 1 slice of bread with shredded Cheddar cheese, 1 with shredded Swiss cheese and 1 with grated Parmesan cheese.
- Repeat with remaining ingredients.
- Arrange bread slices onto an ungreased cookie sheet.
- Broil until cheese is bubbling; serve.
