Cheese Rounds

Servings: 8 to 10
  • 3 ounces [85 g] mild Cheddar cheese, well chilled
  • 3 ounces [85 g] Swiss cheese, well chilled
  • 3 ounces [85 g] Parmesan cheese cut into 1-inch [2.5-cm] pieces, at room temperature
  • 1 loaf party rye bread, sliced
  • 1/4 cup [60 mL] mayonnaise
  • 4 green onions, cut into 1-inch [2.5-cm] pieces
  • Shred Cheddar cheese onto waxed paper.
  • Shred Swiss cheese onto waxed paper.
  • Using a steel blade, grate Parmesan cheese onto waxed paper.
  • Spread each slice of bread with mayonnaise; top with a few green onion pieces.
  • Sprinkle 1 slice of bread with shredded Cheddar cheese, 1 with shredded Swiss cheese and 1 with grated Parmesan cheese.
  • Repeat with remaining ingredients.
  • Arrange bread slices onto an ungreased cookie sheet.
  • Broil until cheese is bubbling; serve.
