Basil and Feta Cheese Spread

Comments: Spread on bread, crostini, or little pizzas, even dollop on pasta, or add to soups or vegetables.
  • 1 cup [250 mL] loosely packed basil leaves
  • 1/4 cup [60 mL] chopped chives
  • 1 pound [454 g] feta cheese
  • Into a food processor, process together basil leaves and chives until fine.
  • Add feta cheese and garlic; process until well mixed.
  • Motor running, slowly pour in enough olive oil to get an easy to spread mixture.
