Gingerbread

  • 1/2 cup [115 g] shortening
  • 1 cup [250 mL] brown sugar
  • 1/2 cup [125 mL] molasses
  • 1/2 teaspoon [2.5 mL] salt
  • 1 teaspoon [5 mL] cinnamon
  • 1/2 teaspoon [2.5 mL] ground clove
  • 2/3 cup [160 mL] boiling water
  • 1 teaspoon [5 mL] baking soda
  • 2 cups [280 g] flour
  • 1 teaspoon [5 mL] baking powder
  • 2 teaspoons [10 mL] ginger
  • 2 eggs, well beaten
  • Cream together shortening and brown sugar.
  • Mix in molasses, salt, cinnamon and ground clove.
  • Pour boiling water over baking soda; add to mixture.
  • Sift together flour, baking powder and ginger; add to mixture, along with beaten eggs.
  • Mix, then beat all the ingredients together.
  • Line a bread loaf pan with thick brown paper; pour dough into pan.
  • Bake into a preheated [325°F to 350°F / 160°C to 180°C] oven, for 40 minutes.
