- 2 cups [500 mL] flour
- 1 teaspoon [5 mL] salt
- 1 teaspoon [5 mL] baking soda
- 2 tablespoons [30 mL] shortening [at room temperature]
- 1/2 cup [125 mL] water

- Mix together flour, salt and baking soda.
- Using a pastry cutter, cut in shortening.
- Make a well in the center.
- Pour and mix in water, into 2 to 3 times.
- Divide dough into 12 equal parts.
- Between 2 sheets of wax paper, roll dough into 7-inch [18-cm] circles.
- Heat a non-buttered iron-cast frypan for 2 minutes.
- Cook tortillas, one at a time, for 90 seconds on each side, until just lightly brown.
- Cover each cooked tortilla with a clean cloth.
