Tortillas

  • 2 cups [500 mL] flour
  • 1 teaspoon [5 mL] salt
  • 1 teaspoon [5 mL] baking soda
  • 2 tablespoons [30 mL] shortening [at room temperature]
  • 1/2 cup [125 mL] water
  • Mix together flour, salt and baking soda.
  • Using a pastry cutter, cut in shortening.
  • Make a well in the center.
  • Pour and mix in water, into 2 to 3 times.
  • Divide dough into 12 equal parts.
  • Between 2 sheets of wax paper, roll dough into 7-inch [18-cm] circles.
  • Heat a non-buttered iron-cast frypan for 2 minutes.
  • Cook tortillas, one at a time, for 90 seconds on each side, until just lightly brown.
  • Cover each cooked tortilla with a clean cloth.
