- 1/4 cup [60 mL] lukewarm water
- 1 pack active dry yeast
- 1 cup [250 mL] water
- 1 teaspoon [5 g] sugar
- 3/4 teaspoon [3.75 mL] salt
- 2 tablespoons [30 mL] oil
- 3 cups [420 g] flour

- Into a small bowl, pour 1/4 cup [60 mL] lukewarm water over dry yeast; set aside for 10 minutes.
- Into a saucepan, heat together 1 cup [250 mL ] water, sugar, salt and oil [between 105 -115°F / 40 - 46°C].
- Pour liquid mixture over yeast mixture.
- Vigourously beat in flour.
- Leave to rise for 1 hour 30 minutes.
- Divide dough into 8 equal parts.
- Arrange oven rack onto the lower position.
- Preheat oven to 500°F [260°C].
- Preheat a cookie sheet for 10 minutes, into preheated oven.
- Shape dough into 2 balls, then cut each ball into 8 parts.
- Roll each part of dough separately, into thin discs.
- Bake, one or two pita breads at a time, onto preheated cookie sheet, for 3 to 4 minutes.
- Repeat with remaining dough.
- Transfer baked, hot pita breads into plastic bags as soon as they are done.
