Rye Bread [bread machine]

Comments: Rye bread flour is a mixture of rye flour and whole-wheat flour [50/50].
For a bread that rises well, carefully follow the recipe step by step.
This bread rises well, but will rise even more when baked longer.

  • 1 cup [250 mL] water
  • 2 tablespoons [30 g] sugar
  • 1 tablespoon [15 mL] salt
  • 2 tablespoons [30 mL] applesauce [optional]
  • 1 1/4 cups + 1 tablespoon [325 mL] rye bread flour
  • 1 1/4 cups + 1 tablespoon [325 mL] cake and pastry flour
  • 2 tablespoons [30 mL] oil
  • 1 [1/4-ounce / 7-g] package active dry yeast or 4 teaspoons [20 mL] crumbled fresh yeast
  • Mix together water, sugar, salt, applesauce, rye bread flour and cake and pastry flour.
  • Make a well in the center; pour in oil and sprinkle with yeast.
  • Proceed, according to the bread machine manufacturer's instructions.
