Chapati [Flat Bread from India]

Comments: A handmade flat bread from India.
The unleavened whole-wheat flour/water dough is first patted into a paper-thin, flat pancake which resembles a tortilla and is then baked onto a hot griddle.
If desired, serve with Feta cheese.
Servings: About 12 flat breads

  • 2 cups [280 g] all-purpose flour
  • 1 teaspoon [5 mL] salt
  • 1/4 cup [60 mL] salad oil
  • 7 tablespoons [105 mL] water
  • Shortening
  • Butter or margarine [optional]
  • Sift together flour and salt.
  • Pour in salad oil and water, mixing well with your hands.
  • Dough will be very stiff.
  • Knead dough for 5 to 7 minutes, until dough looks shiny.
  • Pinch off pieces of dough, about 1 1/2 inches [4 cm] in diameter pieces; roll each piece into a 6-inch [15-cm] circle.
  • Brown on both sides onto a lightly greased, hot griddle.
  • Serve, dotted with butter or margarine if desired.
