Comments: A Belgian specialty enjoyed on Saint Nicholas'Day, schoolkids'Saint.
These cookies are excellent eaten along with mandarin oranges!

IngredientsPreparation
  • 1/2 cup + 1 tablespoon - 2 teaspoons [150 g] butter
  • 1/2 cup + 1 teaspoon [130 mL] dark brown sugar
  • 2 tablespoons [30 mL] water
  • 1/2 teaspoon [2.5 mL] cinnamon
  • 1 cup - 10 teapoons [131.5 g] flour
  • 1/2 teaspoon [2.5 mL] baking powder
  • 1 egg yolk
  • Cream butter with a fork.
  • Add dark brown sugar, water and cinnamon; thoroughly mix.
  • Add flour and baking powder; knead by hand.
  • Leave to rest overnight into a cool environment.
  • Knead again.
  • Transfer dough onto a floured surface [wooden board if possible]; flatten with a knife.
  • Cut dough into shapes; transfer onto a greased baking sheet.
  • Bake for approximately 25 minutes, into a preheated 350°F [180°C] oven.
