Golden Corn Bread
Comments: Serve hot, along with butter, creamy chicken, fish or meat.
Servings: 12 [2 x 3-inch / 5 x 7.5-cm] pieces

  • 1 cup [250 mL] yellow cornmeal
  • 1 cup [140 g] all-purpose flour, sifted
  • 1/4 cup [60 g] sugar
  • 1/2 teaspoon [2.5 mL] salt
  • 4 teaspoons [20 mL] baking powder
  • 1 egg
  • 1 cup [250 mL] milk
  • 1/4 cup [60 g] softened shortening
  • Preheat oven to 425°F [220°C].
  • Sift together yellow cornmeal, all-purpose flour, sugar, salt and baking powder.
  • Add egg, milk and shortening.
  • Using an egg beater, beat together all ingredients until smooth, for approximately 1 minute.
  • Do not overbeat.
  • Pour into a square 8-inch [20-cm] greased cake pan, or into muffin tins.
  • Bake into preheated oven, for 20 to 25 minutes.
