- 1 cup [250 mL] yellow cornmeal
- 1 cup [140 g] all-purpose flour, sifted
- 1/4 cup [60 g] sugar
- 1/2 teaspoon [2.5 mL] salt
- 4 teaspoons [20 mL] baking powder
- 1 egg
- 1 cup [250 mL] milk
- 1/4 cup [60 g] softened shortening

- Preheat oven to 425°F [220°C].
- Sift together yellow cornmeal, all-purpose flour, sugar, salt and baking powder.
- Add egg, milk and shortening.
- Using an egg beater, beat together all ingredients until smooth, for approximately 1 minute.
- Do not overbeat.
- Pour into a square 8-inch [20-cm] greased cake pan, or into muffin tins.
- Bake into preheated oven, for 20 to 25 minutes.
