  • 2 cups [280 g] all-purpose flour, sifted
  • 3/4 teaspoon [3.75 mL] salt
  • 4 eggs, well beaten
  • 375 mL [1 1/2 cups] milk
  • 2 tablespoons [30 mL] melted shortening
  • Preheat oven to 400°F [200°C].
  • Sift together flour and salt.
  • Mix together flour and salt, well beaten eggs, milk and melted shortening.
  • Beat until really bubbling.
  • Do not overbeat.
  • Fill muffins tins up to 2/3rds.
  • Bake into preheated oven, for 40 to 45 minutes.
