- 2 cups [280 g] all-purpose flour, sifted
- 3/4 teaspoon [3.75 mL] salt
- 4 eggs, well beaten
- 375 mL [1 1/2 cups] milk
- 2 tablespoons [30 mL] melted shortening

- Preheat oven to 400°F [200°C].
- Sift together flour and salt.
- Mix together flour and salt, well beaten eggs, milk and melted shortening.
- Beat until really bubbling.
- Do not overbeat.
- Fill muffins tins up to 2/3rds.
- Bake into preheated oven, for 40 to 45 minutes.
