Hush Puppies
Comments: Serve hot, along with butter.

  • Approximately 1 cup [225 g] shortening
  • 2 cups [500 mL] cornmeal
  • 1 tablespoon [8.75 g] flour
  • 1 teaspoon [5 mL] salt
  • 1/2 teaspoon [2.5 mL] baking powder
  • 1 cup [250 mL] milk
  • 1 egg, lightly beaten
  • 2 tablespoons [30 mL] chopped onion
  • Melt approximately 1 inch [2.5 cm] shortening into a frypan, to 375°F [190°C].
  • Beat together cornmeal, flour, salt, baking powder, milk, beaten egg and chopped onion, until well mixed.
  • Spoon a few tablespoons [30 mL] mixture at a time into hot shortening.
  • Fry until golden on both sides.
  • Drain well, onto paper toweling.
