Sourdough Bread [bread machine optional]

  • 3 cups [420 g] sifted bread flour
  • 2 3/4 teaspoons [10.75 L] active dry yeast
  • 1 teaspoon [5 mL] salt
  • 2 teaspoons [10 g] sugar
  • 3 tablespoons [45 g] butter or margarine
  • 1 tablespoon [15 mL] oil
  • 1/2 cup [125 mL] sour cream or plain yogurt
  • 2 teaspoons [10 mL] lemon juice
  • If using a bread machine, mix and bake following manufacturer's instructions..
  • To bake the bread in the oven, mix together all ingredients into the large bowl of a mixer.
  • Leave to rise into a 8 1/2 x 4 1/2 x 2 1/2-inch [22 x 11 x 6-cm] greased mold away from drafts until doubled in bulk.
  • Punch dough down and leave to rise at least twice until until doubled in bulk.
  • Meanwhile, preheat oven to 375°F [190°C].
  • Bake bread into preheated oven for 40 minutes.
