- 2 cups [500 mL] cornmeal
- 2 1/2 teaspoons [12.5 mL] baking powder
- 1 teaspoon [5 mL] salt
- 4 tablespoons [35 g] flour
- 1 cup [250 mL] milk
- 2 eggs
- 2 tablespoons [30 mL] cooking oil

- Mix together cornmeal, baking powder, salt and flour; pour in milk and mix.
- Add eggs and oil, and stir.
- Pour into greased muffin tins or cupcake holders, or onto the bottom of a Dutch oven.
- Bake into covered Dutch oven, for 20 to 30 minutes.
