Southern-Style Cornbread [Dutch oven]

IngredientsPreparation
  • 2 cups [500 mL] cornmeal
  • 2 1/2 teaspoons [12.5 mL] baking powder
  • 1 teaspoon [5 mL] salt
  • 4 tablespoons [35 g] flour
  • 1 cup [250 mL] milk
  • 2 eggs
  • 2 tablespoons [30 mL] cooking oil
  • Mix together cornmeal, baking powder, salt and flour; pour in milk and mix.
  • Add eggs and oil, and stir.
  • Pour into greased muffin tins or cupcake holders, or onto the bottom of a Dutch oven.
  • Bake into covered Dutch oven, for 20 to 30 minutes.
