- Basic bread dough*
- 1 cup [250 mL] Old Cheddar cheese cubes [4 ounces / 113 g]
- 1/3 cup [80 mL] sweet green pepper dices, membranes removed and seeded
- 1/3 cup [80 mL] sweet red pepper dices, membranes removed and seeded
- 1/4 cup [60 mL] chopped onion
- 1 egg
- 1 tablespoon [15 mL] water
- Coarse salt, to sprinkle [optional]
Basic Bread Dough*
- 1 cup [250 mL] milk
- 1 teaspoon [5 mL] salt
- 1 egg
- 2 tablespoons [30 g] unsalted butter, softened
- 3 1/2 cups [490 g] bread or all-purpose flour
- 1 tablespoon [15 g] sugar
- 2 teaspoons [10 mL] active dry yeast

- For the basic dough, measure exact amounts of each ingredient.
- Transfer into bread machine following the order suggested by the manufacturer
- Proceed on dough cycle adding Old Cheddar cheese cubes, sweet green and red pepper dices and chopped onion to the dough at the end of the first kneading cycle.
- Grease a baking sheet; set aside.
- Transfer dough onto a lightly floured surface; cover with a clean cloth and leave dough to rest for 5 minutes.
- Shape dough into a ball.
- Transfer dough in the middle of reserved greased baking sheet; flatten dough into a approximately 2-inch [5-cm] thick round.
- Cover dough once more with cloth; leave dough to rise, into a warm environment away from drafts, for 45 minutes.
- Preheat oven to 375°F [190°C].
- Beat together egg and water into a small bowl.
- Using a pastry brush, lightly coat sides and top of dough with mixture.
- Sprinkle top of bread with coarse salt if desired.
- Bake bread into preheated oven for approximately 30 minutes, until golden brown.
- Immediately transfer bread onto a wire to cool.
